The healthiest and lightest hamburger

Here it is our vegan recipe to enjoy a delicious and healthy hamburger, made with tofu, quinua and broccoli.

With this amount, we get more than 10 hamburger: perfect for a party, or to freeze and cook in another moment.

[bs_icon name=»glyphicon glyphicon-chevron-down»] 20 g. of hydrated quinua (if you use ordinary quinua, you will have to boil it before, during the time specified in package)

Maybe the first Burger isn’t perfect, but it takes practice. Just follow next steps one by one, and you haven’t any issue. Let’s go!

1. We start by hydrating quinua in a bowl with water.

2. Next, we boil all broccoli (previously washed and cut). We leave it in pot, until it is well-cooked (when it can be pierced with a fork)

3. Now, we grind onion, red pepper and tofu, and bean with beater vigorously. Then, we strain quinua, and add it to the rest of vegetables, and grind again. We put this mix in big bowl.

4. When broccoli is well-cooked, we move it away from pot, strait it, grind it with beater and add into big bowl (with onion, pepper, tofu and quinua)

5. Now, is time to mix all, adding salt and the spices. Add a large stream of olive oil, and mix again. And 1/3 of bread crumb glass too, to make easier the mix handle, which has to be as much uniform as possible.

6. Dampen our hands with water, and pick up a mix portion, make a ball, squash it, and coat with crumbs. In this moment, we have to keep in mind that the hamburger has to be squeezed, if not, it will mess up when we fry it, so squash it powerfully. If you have extra time, freeze them 30’ in freezer: it compacts hamburgers, and to fry them will be easier.

7. In a skillet, we put a large stream of olive oil, and add peeled garlic; when oil will be hot, and garlic start to be fried on both sides, move it away: we get a delicious essence in oil! Fry the hamburgers, on both sides with a spatula, carefully to prevent breakage.

8. Toast the bread in toaster, and add fresh spinaches, eggplant slices, arugula… and your favorite sauces, add the hamburgers, and ready to eat!

9. Our advice… if you take a pair of green asparagus, zucchini and mushroom slices and griddle them with a little stream of soya sauce and sesame seams, and put them over the hamburger, you get an spectacular touch!

Now we just enjoy our hamburger with a good company to live a healthy life!
