This week, we bring you a great recipe including quinoa: cereal high in carbohydrates, fiber and protein… perfect in autumn!!

- 100 g of quinoa
- 1 aubergine
- 1 chive
- Aurugula leaves
- Endive leaves
- Fried corn
- 1 handful of sesam seeds
- 1 tablespoon of soy sauce
- Olive oil
Mince and saute the chive in a pan, with a Little oil. Cut the aubergine in dices and add it; cook it until everything is well poached. Add toasted sesam seeds, and mix it well. Keep the result, and follow next step.
Cook the quinoa over medium heat in a saucepan with water (for every measure of quinoa, add two of water) during 15-20 minutes, until quinoa has absorbed completely the water. Mix quinoa with vegetables we kept before, and add a soy sauce splash, if it is necessary.
For the garnish, crush fried corn and put it in a bowl. Add a vinegar splash, oil splash and add aurugula and endive leaves. Mix well and serve quinoa helping yourself with a round hollow mold.
